Black caviar Russian Cold Collation

Ingredients

For 120 grams of ham - 120 grams of boiled tongue
4 eggs
80 grams of meat
Gelatin powder
Paper, greens, mushrooms and horse radish of your personal taste.

Instructions

Boil the meat and cut it into small pieces. Decorate with boiled carrots, eggs, sweet red peppers and parsley. Put some gelatin powder into the clear meat broth and leave alone for about 40 minutes. Afterwards, pour beaten egg-whites into the broth and place the pot on the stove for 5-7 minutes on low heat. Remove scum, filter and chill. Layer by layer place the jelly on to the meat. Cut the meat into slices in order to make it easier to serve, and then add some ham and tongue. Also decorate the dish with marinated mushrooms and add horse radish. Also if you want the dish to look really Russian, you can build "matroyshkas". Take a boiled egg and make it stable by cutting off a little bit on the bottom. Make a hat out of carrots and place it on the top of the egg. Using some bread, carrots and your imagination you can make eyes, a nose and a mouth.

Russian Sturgeon

Instructions

One kilo of sturgeon put into boiled water for 3-5 minutes, extract, take off the scales, put back into the pot, add 0,2 liters of pickles, 0,4 liters of water, 2 teaspoons of salt, 1 onion, parsley and celery. Close the pot with a cover and stew in the oven for about 30 minutes - until it's ready.

In a separate pot mix 2 dining spoons of flour with 2 dining spoons of olive oil into the stewed sturgeon broth. After that add 2 dining spoons of mashed tomatoes, one sliced pickle, 3-5 sliced and marinated mushrooms and 100 grams of olives. Mix the fish with this sauce, then boil and serve!

Turnip Soup with Toast

Ingredients

3-4 medium-sized turnips,
60 grams of batter,
0,5 glass of milk,
Some bread,
Clear meat broth 1,5 liters,
Dill and parsley,
Salt and some spices.

Instructions:

Clear turnips and slice into small blocks. Place them into the pot and boil until they become soft. Then chill the turnips (this is needed for the bitter taste to disappear). Afterwards, put the turnips into the clear meat broth and cook until it's ready. At the very end add 30 grams of butter, salt and spices. Then take the bread, wet it in milk and fry it with the rest of the butter. Serve the soup with greens and the toast on a separate plate.

Cossack Meat Balls

Ingredients

Minced meat 170 grams,
Crackers 15 grams,
Melted fat 10 grams,
Rice 50 grams,
Mashed tomatoes 10 grams,
Margarine 10 grams,
Sauce 125 grams,
Cheese 5 grams,
Salt

Instructions

Mix veal, mutton and pork mince, add bread and salt and again mix well. Then fry the meat balls and add rice porridge, cooked with tomatoes. All this should be covered with grated cheese and baked until it's ready.

National Russian Bliny (crepes)

Ingredients

2 glasses of wheat flour,
5 eggs,
100 grams of butter,
2,5 glasses of kefir,
Salt and sugar to your liking.

Instructions

Put the egg yolks into a pot, add salt, sugar and mix well. Then add wheat flour, butter and milk and make a weak pastry. Afterwards, the dough needs to be stirred very well. The better it is stirred the better the bliny will be! Then just fry the bliny on a pan and you can serve it with cottage cheese, mashed potatoes or simply with some jam.

The Traditional Fish Dish

Ingredients

1 kilo of a good fish like cod,
6 eggs,
100 grams of tomato sauce,
1 teaspoon of salt,
Some black pepper,
Some parsley,
50 grams of lemon sap.
For the clear broth:
2 liters of water,
1/4 glass of white wine or 7% vinegar,
1 onion,
1 carrot,
Some parsley and dill,
1-2 bay leafs,
Some black pepper and cloves.

Instructions

First make the clear broth. Put all the ingredients into cold water and cook for 30 minutes. Right after that put the fish into the pot and cook it until it is almost ready. Remove the fish and make sure to remove all of its bones. After that mix it with eggs, tomato sauce, salt and pepper. Then put the fish into the pot, close it with foil and bake for about 30 minutes. Serve it decorated with greens.

Chicken Tabaca

Ingredients

1 chicken,
2 cloves of garlic,
Some butter,
Tomatoes,
Spring onions,
Salt,
Black pepper,
Dill, parsley,
Garlic sauce.

Instructions

The chicken needs to be cleaned, washed and cut into two parts. Cover the chicken on all sides with garlic, salt and pepper and put this into the frying pan. Close the frying pan tightly with a cover so the chicken will be pressed. Fry on medium heat for about 20-30 minutes before the crust becomes rosy in color. Then turn the chicken onto its other side and cook it until it's completely ready. For the garlic sauce you need to pound 3-4 cloves of garlic and place it into the hot and clear chicken broth. Leave it for 2-3 hours to brew.

Easter Cake with Chocolate

Ingredients

About 400 grams of flour,
50-70 grams of fresh yeast,
15 eggs,
500 grams of sugar,
100 grams of cocoa powder,
1-2 small glasses of rum,
1 glass of red wine,
100 grams rye crackers,
100 grams of orange-peels,
add a teaspoon of thinly milled cinnamon, cloves, cardamom and salt according to your personal preferences.

Instructions

Dissolve yeast into a small amount of milk, mix it with flour and leave it to ferment in a warm place. After a few minutes, add 15 yolks grinded with sugar, cocoa, rum, red wine, milled rye crackers, orange-peels and all the spices. Mix all of this and again leave it to ferment in a warm place. When the dough slightly rises, add beaten egg-whites into the firm foam. Add salt according to your preferences and some flour as needed. Place the dough into the desired shape, and be sure to oil all sides with butter and sprinkle some flour on top of that. When the pastry rises into its shape, continue to bake until it's ready.
